Information about food, food safety, food preservation (including canning, freezing, drying, pickling) and nutrition is provided through the food safety and preservation hotline.  Specific diets or prescription diets are not addressed.

Loss of power can jeopardize the safety of your food.  It is important to know how to keep your food safe to minimize the potential for foodborne illness.  Meat, poultry, fish and eggs must be kept at a temperature of 40 degrees F. or below to ensure it is safe for consumption.  This link provides information (file size 60k) on how to know if your refrigerated and frozen foods afe safe during and after a power outage.

Dry ice is solid carbon dioxide.  It gives more than twice the cooling energy of frozen water per pound and therefore can be used to keep foods frozen during an extended power outage.  Certain precautions must be taken, however, when using dry ice as it can be dangerous. This link provides information (file size 51k) on the safe use of dry ice during a power outage.
